Italian (Italian style) roast

Almost all Italian roasters claim that their coffee is medium roasted, but in fact they make the darkest, oiliest, most bitter and charred coffee ever known. Almost all Italian roasted beans are spoiled by the time they are drunk. The cellulose structure of the bean, destroyed in roasting, leads to rapid oxidation and staling. In the cup it is burnt, smoky, charred. It has a medium density body.
