The lighter colored beans are more floral and acidic than the darker ones. Light roasted beans have a more fruity taste, milder aroma and smaller body. Darker roasted beans have a smoky, harsh, bitter and charred taste. If the beans are over-roasted, the taste becomes completely bitter. Green coffee with the same characteristics can be roasted in the same color with different profile curve, temperature, time and boiler pressure values. However, beans roasted with two different profiles in this way will not have the same aroma even though they have the same color. The important thing in coffee roasting is to roast coffee with the flavor and aroma desired by the roaster or the customer.
